  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 pound of your favorite pasta (fettuccine or penne)
  • Parmesan cheese, for garnish
  • Fresh basil leaves (optional)

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Cook your pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  2. Sauté the Chicken: Season the chicken breasts generously with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and no longer pink in the center. Remove the chicken from the skillet and let it rest.
  3. Make the Sauce: In the same skillet, add minced garlic and sauté until fragrant (about 30 seconds). Stir in the Italian seasoning, chicken broth, and heavy cream. Bring to a simmer, then toss in the sun-dried tomatoes and baby spinach.
  4. Combine: Slice the chicken and return it to the skillet with the sauce. Let everything simmer together for about 3-5 minutes.
  5. Toss the Pasta: Finally, add the cooked pasta into the skillet and stir until everything is well coated.
