Ingredients

  • 2 pounds of potatoes (russet or Yukon gold)
  • 2 cups of fresh spinach, chopped
  • 1/2 cup of milk (or your favorite non-dairy alternative)
  • 4 tablespoons of butter
  • Salt and pepper to taste
  • A pinch of garlic powder (optional)

Instructions

  1. Prep the potatoes: Begin by peeling and cubing your potatoes into even chunks for consistent cooking. Place them in a large pot, cover them with cold water, and sprinkle in a little salt. Bring to a boil over medium heat.
  2. Cook the potatoes: Once boiling, reduce the heat and let the potatoes simmer until tender (about 15 to 20 minutes). They’re ready when you can easily pierce them with a fork.
  3. Add the spinach: While the potatoes are cooking, briefly wash your spinach and chop it up. When the potatoes are just about done, add the chopped spinach to the pot for the last 2 minutes of cooking.
  4. Drain and mash: Once everything is cooked, drain the potatoes and spinach, and then return them to the pot. Add butter, milk, salt, and pepper. Mash everything together until you reach your desired consistency.
  5. Serve and enjoy: Make sure to taste and adjust your seasonings. Feel free to sprinkle a little extra butter or freshly cracked black pepper on top before serving.

Notes

If you’re short on time, you can use frozen spinach. For added flavor, toss in some chopped fresh herbs like parsley or chives.
