Description

A quick and easy one-pan dish featuring smoky sausages, colorful vegetables, and delicious flavors, perfect for busy weeknights.

Ingredients

Scale
  • 1 pound of sausages (Italian, chicken, or plant-based)
  • 1 pound of baby potatoes, halved
  • 1 bell pepper, sliced
  • 1 large onion, sliced
  • 3 tablespoons of olive oil
  • Salt and pepper, to taste
  • 1 teaspoon of garlic powder
  • Optional: Fresh herbs like rosemary or thyme, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and drizzle 2 tablespoons of olive oil on a large baking sheet.
  2. Toss the halved potatoes, sliced bell pepper, and onion on the tray, then drizzle with remaining olive oil and season with salt, pepper, and garlic powder. Mix to coat and nestle the sausages among the veggies.
  3. Bake in the preheated oven for about 25-30 minutes, tossing halfway for even roasting, until golden and sizzling.

Notes

Experiment with different sausage types and add leftover veggies to enhance the dish. Avoid overcrowding the pan for optimal roasting.
