- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 teaspoons cumin
- 2 teaspoons paprika
- Salt and black pepper, to taste
- Juice of 1 lime
- 1 cup fresh coriander (cilantro), chopped
- 1/2 cup Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons lime juice
- 1 garlic clove, minced
- Salt, to taste
Instructions
- Marinate the chicken: In a bowl, combine the chicken breasts with olive oil, cumin, paprika, lime juice, salt, and pepper. Let it marinate for at least 30 minutes.
- Prepare the sauce: While the chicken is marinating, blend together the fresh coriander, Greek yogurt, mayonnaise, lime juice, minced garlic, and salt. Adjust the seasoning as needed.
- Grill the chicken: Preheat your grill to medium-high heat. Place the marinated chicken on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Serve it up: Remove the chicken from the grill, let it rest for a few minutes, slice it, and serve with the creamy coriander sauce.
Notes
Chicken can dry out quickly on the grill; use a meat thermometer for the best results. The coriander sauce can be prepared ahead of time.
