  • 1 can (20 oz) sliced pineapple rings, drained
  • Maraschino cherries (as many as desired)
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (or a non-dairy alternative)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt 1/2 cup butter in a 9-inch round cake pan in the oven.
  3. Sprinkle brown sugar over the melted butter.
  4. Arrange pineapple rings over the mixture and add cherries in the centers if desired.
  5. Beat the softened butter with granulated sugar until light and fluffy.
  6. Add eggs one at a time, mixing well.
  7. Stir in vanilla extract.
  8. Whisk together flour, baking powder, and salt in a separate bowl.
  9. Combine dry ingredients with the butter-egg mixture, alternating with milk.
  10. Pour the batter over the arranged fruit in the cake pan.
  11. Bake for 40-45 minutes, or until a toothpick comes out clean.
  12. Flip the cake onto a plate after letting it cool for 5 minutes.
