- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk (or a non-dairy alternative)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- Melt 1/2 cup butter in a 9-inch round cake pan in the oven.
- Sprinkle brown sugar over the melted butter.
- Arrange pineapple rings over the mixture and add cherries in the centers if desired.
- Beat the softened butter with granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well.
- Stir in vanilla extract.
- Whisk together flour, baking powder, and salt in a separate bowl.
- Combine dry ingredients with the butter-egg mixture, alternating with milk.
- Pour the batter over the arranged fruit in the cake pan.
- Bake for 40-45 minutes, or until a toothpick comes out clean.
- Flip the cake onto a plate after letting it cool for 5 minutes.
Notes
You can substitute the pineapple with other fruits like peaches or cherries. Store leftovers in an airtight container in the fridge for up to 3 days.
