- 4 salmon fillets
- 2 cups vegetable broth
- 1 cup water
- 1 lemon (zested and juiced)
- Fresh dill or parsley (for garnish)
- Salt and pepper to taste
- 2 pounds of potatoes (Russet or Yukon Gold)
- 1/2 cup butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Prepare the Potatoes: Start by peeling and chopping your potatoes into even chunks. Place them in a pot of salted boiling water. Cook for about 15-20 minutes or until fork-tender. Once cooked, drain the potatoes and return them to the pot.
- Make the Mashed Potatoes: Add butter and milk to the drained potatoes, then mash them until creamy. Don’t hold back on the salt and pepper! Set aside to keep warm.
- Prep the Salmon: In a large skillet, combine the vegetable broth, water, lemon zest, and juice. Bring to a gentle simmer over medium heat.
- Poach the Salmon: Season the salmon fillets with salt and pepper, then gently add them to the simmering broth. Cover the skillet and let the salmon poach for about 10-12 minutes, until it’s cooked through and flakes easily with a fork.
- Serve: Carefully remove the salmon from the skillet and serve it atop the creamy mashed potatoes. Garnish with fresh dill or parsley for a pop of color and flavor!
Notes
Control the heat while poaching to avoid breaking the salmon. Experiment with herbs in the poaching liquid for added flavor.
