Ingredients

  • 4 salmon fillets
  • 2 cups vegetable broth
  • 1 cup water
  • 1 lemon (zested and juiced)
  • Fresh dill or parsley (for garnish)
  • Salt and pepper to taste
  • 2 pounds of potatoes (Russet or Yukon Gold)
  • 1/2 cup butter
  • 1/2 cup milk

Instructions

  1. Prepare the potatoes: Start by peeling and chopping your potatoes into even chunks. Place them in a pot of salted boiling water. Cook for about 15-20 minutes or until fork-tender. Once cooked, drain the potatoes and return them to the pot.
  2. Make the mashed potatoes: Add butter and milk to the drained potatoes, then mash them until creamy. Don’t hold back on the salt and pepper! Set aside to keep warm.
  3. Prep the salmon: In a large skillet, combine the vegetable broth, water, lemon zest, and juice. Bring to a gentle simmer over medium heat.
  4. Poach the salmon: Season the salmon fillets with salt and pepper, then gently add them to the simmering broth. Cover the skillet and let the salmon poach for about 10-12 minutes, until it’s cooked through and flakes easily with a fork.
  5. Serving up: Carefully remove the salmon from the skillet and serve it atop the creamy mashed potatoes. Garnish with fresh dill or parsley for a pop of color and flavor!

Notes

Control the heat while poaching to prevent the salmon from falling apart. Experiment with herbs in the poaching liquid for added flavor.
