- 1 pound shrimp, peeled and deveined
- 1 pound mussels, scrubbed and debearded
- 1 onion, chopped

- 2 cups diced tomatoes (canned works great)
- 4 cups fish stock or chicken broth
- 1 cup dry white wine
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Sauté the vegetables: In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until the veggies are soft and fragrant, about 5 minutes.
- Add the tomatoes: Stir in the diced tomatoes and let it simmer for a few minutes.
- Pour in the broth and wine: Add the fish stock and white wine into the pot. Season with smoked paprika, salt, and pepper. Bring it to a gentle boil, then reduce the heat to let it simmer.
- Cook the seafood: Add the fish and shrimp into the pot, cooking for about 5 minutes.
- Add the mussels: Finally, toss in the mussels and cook until they open, about 3 to 5 minutes.
- Garnish and serve: Ladle your hearty stew into bowls, sprinkle with fresh parsley, and serve hot.
Notes
Feel free to add other seafood like clams or squid depending on your preference. This stew can be made in advance, and the flavors deepen over time.
