- 1 cup almond flour
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup powdered sugar (plus extra for dusting)
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon almond extract
- 1 egg white
- 1/2 cup raspberry jam (or your favorite flavor)
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the almond flour, all-purpose flour, salt, and baking soda until well combined.
- Beat together the softened butter and powdered sugar until light and fluffy, about 2-3 minutes.
- Beat in almond extract and egg white until well incorporated.
- Add the flour mixture to the butter mixture, mixing until just combined.
- Form small balls of dough (about 1 tablespoon each) and make a small indentation in the center with your thumb.
- Spoon about 1 teaspoon of raspberry jam into each indentation.
- Bake for about 12-15 minutes or until edges are lightly golden.
- Dust cooled cookies with powdered sugar.
