Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup powdered sugar (plus extra for dusting)
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon almond extract
  • 1 egg white
  • 1/2 cup raspberry jam (or your favorite flavor)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the almond flour, all-purpose flour, salt, and baking soda until well combined.
  3. Beat together the softened butter and powdered sugar until light and fluffy, about 2-3 minutes.
  4. Beat in almond extract and egg white until well incorporated.
  5. Add the flour mixture to the butter mixture, mixing until just combined.
  6. Form small balls of dough (about 1 tablespoon each) and make a small indentation in the center with your thumb.
  7. Spoon about 1 teaspoon of raspberry jam into each indentation.
  8. Bake for about 12-15 minutes or until edges are lightly golden.
  9. Dust cooled cookies with powdered sugar.
