- 1 ½ cups digestive biscuit crumbs
- ½ cup unsalted butter, melted
- 1 tablespoon sugar
- 2 (8 oz) packages cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh raspberries, plus more for decorating
- ½ cup pistachios, shelled and roughly chopped
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust by mixing the digestive biscuit crumbs, melted butter, and sugar in a bowl.
- Press the mixture into a greased 9×9-inch baking pan.
- Bake the crust for about 10 minutes.
- Make the cheesecake filling by beating the cream cheese until smooth.
- Add the sugar and vanilla extract, beating until fluffy.
- Add eggs one at a time, mixing gently.
- Fold in the raspberries and pistachios.
- Pour the cheesecake mixture over the crust.
- Bake for 30-35 minutes until center is set with a slight jiggle.
- Cool to room temperature, then refrigerate for at least 4 hours.
- Serve chilled, topped with additional raspberries and pistachios.
Notes
Don’t overmix the filling and feel free to swap out raspberries for other berries.
