A vibrant celebration of flavors combining earthy roasted beets with creamy goat cheese and crunchy walnuts.


Ingredients

  • 34 medium-sized fresh beets
  • 4 oz goat cheese, crumbled
  • 1 cup mixed greens (spinach, arugula, or salad mix)
  • ¼ cup walnuts, toasted
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap the washed beets in alumium foil and roast for about 45-60 minutes until tender. Let them cool, then peel off the skins.
  2. Clean and dry your mixed greens, placing them in a large salad bowl.
  3. Slice the cooled beets into rounds or wedges and toss them onto your greens.
  4. Sprinkle the crumbled goat cheese and toasted walnuts over the beets.
  5. Whisk together balsamic vinegar, olive oil, salt, and pepper in a small bowl. Drizzle this over your salad just before serving.
  6. Toss everything gently to combine, then enjoy!

Notes

Roasting brings out the sweetness in the beets, so don’t rush this step! Feel free to add diced apples or pomegranate seeds for extra flavor.
