Ingredients

- 3–4 medium-sized fresh beets
- 4 oz goat cheese, crumbled
- 1 cup mixed greens (spinach, arugula, or any salad mix)
- ¼ cup walnuts, toasted
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wrap the washed beets in aluminum foil and roast for about 45-60 minutes until they’re tender.
- Clean and dry your mixed greens. Place them in a large salad bowl.
- Slice the cooled beets into rounds or wedges and toss them onto your greens.
- Sprinkle the crumbled goat cheese and toasted walnuts over the beets.
- Whisk together the balsamic vinegar, olive oil, salt, and pepper. Drizzle this dressing over your salad.
- Toss everything gently to combine and enjoy.
Notes
Roasting enhances the sweetness of the beets. You can also add diced apples or pomegranate seeds for extra flavor.
