Ingredients

  • 34 medium-sized fresh beets
  • 4 oz goat cheese, crumbled
  • 1 cup mixed greens (spinach, arugula, or any salad mix)
  • ¼ cup walnuts, toasted
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap the washed beets in aluminum foil and roast for about 45-60 minutes until they’re tender.
  2. Clean and dry your mixed greens. Place them in a large salad bowl.
  3. Slice the cooled beets into rounds or wedges and toss them onto your greens.
  4. Sprinkle the crumbled goat cheese and toasted walnuts over the beets.
  5. Whisk together the balsamic vinegar, olive oil, salt, and pepper. Drizzle this dressing over your salad.
  6. Toss everything gently to combine and enjoy.

Notes
