Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Cajun seasoning (or to taste)
  • 1 lb shrimp, peeled and deveined
  • 1 lb crab meat
  • 1 lb andouille sausage, sliced
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish
  • Cooked rice, for serving

Instructions

  1. Make the Roux: Start by pouring your vegetable oil into a large pot over medium heat. Gradually whisk in the flour, stirring continuously to form a roux. Cook this mixture for around 15-20 minutes until it’s a rich brown colour.
  2. Sauté the Vegetables: Once your roux is ready, add the diced onion, bell pepper, and celery. Sauté this mixture until the vegetables have softened, which should take about 5 minutes.
  3. Add the Aromatics: Stir in the garlic and cook for another 1-2 minutes until fragrant.
  4. Combine the Liquids and Season: Pour in the chicken broth and diced tomatoes. Add the Cajun seasoning, bay leaf, salt, and pepper. Bring this mixture to a simmer, allowing it to bubble away for about 20 minutes.
  5. Introduce the Seafood: Finally, add the shrimp, crab meat, and sausage to the pot. Let it cook for an additional 5-7 minutes, or until the seafood is cooked through.
  6. Serve and Enjoy: Remove the bay leaf, and taste for seasoning adjustments. Spoon the gumbo over a bowl of rice, garnishing with fresh parsley. Enjoy every delectable bite!

Notes

If your gumbo appears too thick, don’t hesitate to add a bit more broth. Gumbo tastes even better the next day, so feel free to prepare it in advance. Substitute chicken or omit seafood for a variation.
