  • 1 lb smoked sausage, sliced
  • 6 cups seafood stock or chicken broth
  • 2 cups okra, sliced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Cooked rice (for serving)
  • Fresh parsley, for garnish

Instructions

  1. Make the Roux: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour to create a roux. Stir continuously for about 15-20 minutes, or until it turns a deep brown color – like milk chocolate!
  2. Sauté the Vegetables: Add the diced onions, bell peppers, celery, and garlic to the roux. Cook for an additional 5-10 minutes, allowing the veggies to soften and absorb all that lovely flavor.
  3. Combine the Ingredients: Slowly stir in the seafood stock, ensuring there are no lumps. Add in the Cajun seasoning, salt, pepper, sliced sausage, and okra. Bring the mixture to a gentle boil, then reduce the heat and simmer for about 30 minutes, stirring occasionally.
  4. Add the Seafood: Once the gumbo is fragrant and thickened, gently fold in the crab and prawns. Cook for another 10-15 minutes until the seafood is cooked through but tender.
