- 1 pound mixed seafood (shrimp, scallops, and fish)
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 cup frozen peas
- 1 onion, chopped
- 2 cups cream
- Salt and pepper to taste
- Fresh herbs (like parsley or dill)
- 1 pie crust (store-bought or homemade)
- 1 egg, beaten (for egg wash)
Instructions
- Prep the vegetables: Start by peeling and dicing your potatoes and carrots. Then, chop up the onion into small pieces.
- Cook your ingredients: In a large pot, combine your onions, potatoes, and carrots. Add a pinch of salt, cover with water, and boil until tender (about 15-20 minutes). Toss in the frozen peas during the last few minutes!
- Create the creamy sauce: Once your veggies are cooked, drain them and return them to the pot. Pour in the cream, adjusting the seasonings with salt and pepper. Stir in your seafood and fresh herbs, allowing everything to simmer gently for about 5 minutes.
- Assemble your pie: Preheat your oven to 180°C (350°F). Roll out your pie crust and fit it into a greased pie dish. Pour the seafood mixture into the crust, ensuring even distribution. Cover it with another layer of pie crust, sealing the edges, and make a few slits for steam to escape. Finish off with an egg wash.
- Bake to perfection: Pop your pie in the preheated oven and bake for about 30-35 minutes or until the crust is golden brown and flaky.
Notes
Add a squeeze of lemon juice or a splash of white wine for extra zing! You can freeze your pie dough ahead of time for easier handling.
