- 2 lb beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup celery, chopped
- 1 cup onions, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 325°F.
- Sear the beef in a large pot with olive oil until browned on all sides.
- Sauté the onions, carrots, and celery for about 5 minutes until onions are translucent, then add garlic and cook for another minute.
- Combine tomato paste, Worcestershire sauce, and thyme; return the beef to the pot and pour in the beef broth with the potatoes. Bring to a gentle boil.
- Braise the stew in the oven for about 2.5 to 3 hours until the beef is tender.
- Taste and adjust seasoning as needed.
- Finish with fresh parsley and serve hot.
