Ingredients

  • 2 lb beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup celery, chopped
  • 1 cup onions, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 325°F.
  2. Sear the beef in a large pot with olive oil until browned on all sides.
  3. Sauté the onions, carrots, and celery for about 5 minutes until onions are translucent, then add garlic and cook for another minute.
  4. Combine tomato paste, Worcestershire sauce, and thyme; return the beef to the pot and pour in the beef broth with the potatoes. Bring to a gentle boil.
  5. Braise the stew in the oven for about 2.5 to 3 hours until the beef is tender.
  6. Taste and adjust seasoning as needed.
  7. Finish with fresh parsley and serve hot.
