- 1 pound boneless, skinless chicken thighs (or breasts if you prefer)
- 1 pound smoked sausage (like Andouille or kielbasa)
- 1 pound shrimp, peeled and deveined
- 1 large onion, chopped
- 1 bell pepper, chopped (red or green)
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 cup long-grain rice
- 2 1/2 cups chicken broth
- 2 teaspoons Cajun seasoning (or more, if you like it spicy!)
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- Prep the chicken and sausage: Start by cutting the chicken and sausage into bite-sized pieces.
- Layer it up: In your slow cooker, layer the chicken, sausage, onion, bell pepper, and garlic.
- Add the good stuff: Stir in the diced tomatoes, rice, chicken broth, Cajun seasoning, thyme, paprika, salt, and pepper. Give it a good mix.
- Set and forget: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
- Shrimp time: About 30 minutes before serving, stir in the shrimp.
- Garnish and enjoy: Once cooked, taste and adjust seasonings if needed, serving with green onions on top.
