  • 1 pound smoked sausage (like Andouille or kielbasa)
  • 1 pound shrimp, peeled and deveined
  • 1 large onion, chopped
  • 1 bell pepper, chopped (red or green)
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup long-grain rice
  • 2 1/2 cups chicken broth
  • 2 teaspoons Cajun seasoning (or more, if you like it spicy!)
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Prep the chicken and sausage: Start by cutting the chicken and sausage into bite-sized pieces.
  2. Layer it up: In your slow cooker, layer the chicken, sausage, onion, bell pepper, and garlic.
  3. Add the good stuff: Stir in the diced tomatoes, rice, chicken broth, Cajun seasoning, thyme, paprika, salt, and pepper. Give it a good mix.
  4. Set and forget: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  5. Shrimp time: About 30 minutes before serving, stir in the shrimp.
  6. Garnish and enjoy: Once cooked, taste and adjust seasonings if needed, serving with green onions on top.
