- 3 to 4 lbs of corned beef brisket
- 12 cups of water (or enough to cover the beef)
- 1 large onion, quartered
- 2 cloves garlic, minced
- 1 lb baby carrots
- 1 small head of green cabbage, cut into wedges
- 6 medium potatoes, quartered
- 2 tablespoons of whole mustard seeds (optional)
- Salt and pepper to taste
- Bay leaves (about 2)
Instructions
- Prep your ingredients: Rinse the corned beef under cold water to remove excess salt and cut up your veggies.
- Layer it up: In your slow cooker, layer the quartered onions, garlic, carrots, and potatoes.
- Add the beef: Place the corned beef brisket on top and pour in enough water to cover the beef.
- Spice it up: Sprinkle the mustard seeds and toss in the bay leaves. Add salt and pepper to taste.
- Cook, relax, and unwind: Cover and cook on low for 8-10 hours or high for 4-5 hours.
- Add the cabbage: About an hour before serving, place the cabbage wedges in the slow cooker.
- Serve and enjoy: Once everything is tender, let the beef rest before slicing and serve with the veggies and broth.
Notes
If the sauce looks a little lumpy, it’s normal. Leftovers taste even better the next day. You can add apple cider vinegar or hot sauce for extra flavor.
