Ingredients

  • 1 lb boneless skinless chicken thighs
  • 2 tbsp honey
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sriracha
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • Sesame seeds for sprinkling
  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • A splash of water for consistency

Instructions

  1. Marinate the Chicken: In a bowl, combine honey, grated ginger, soy sauce, sriracha, minced garlic, and a pinch of salt and pepper. Add your chicken, making sure it’s well-coated. Cover the bowl and let it marinate in the fridge for at least 30 minutes.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Remove the chicken from the marinade and add it to the skillet. Cook for about 5-7 minutes on each side or until cooked through. Bring back that marinade and let it simmer until it thickens slightly, then pour it over the chicken.
  3. Prepare the Veggies: Steam the broccoli in the microwave for about 3-4 minutes. Sauté the sliced bell peppers in a separate pan with olive oil until tender.
  4. Make the Yum Yum Sauce: In a small bowl, whisk together mayonnaise, ketchup, rice vinegar, sugar, and water until smooth.
  5. Assemble Your Bowls: Divide cooked rice among bowls. Top with sliced chicken, broccoli, sautéed peppers, drizzle with Yum Yum sauce, sprinkle sesame seeds, and finish with green onions.

Notes

This dish can be made with tofu or shrimp as tasty alternatives. Leftovers can be stored in an airtight container and are great for lunch the next day.
