  • 3 tablespoons of soy sauce

  • 2 teaspoons of sesame oil
  • ¼ cup of soy sauce
  • 2 tablespoons of sugar
  • 1 tablespoon of hoisin sauce
  • 2 teaspoons of chili paste (adjust to your spice level!)
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • ¼ cup of roasted peanuts
  • Green onions, sliced (for garnish)
  • Sesame seeds (optional)

Instructions

  1. Cook the noodles: Begin by boiling a pot of water. Toss in the egg noodles and cook according to the package instructions until al dente. Drain, rinse with cold water, and set aside.
  2. Marinate the chicken: In a medium bowl, combine diced chicken with 3 tablespoons of soy sauce, rice vinegar, and cornstarch. Let that sit for about 10 minutes.
  3. Whip up the sauce: In another bowl, mix together the soy sauce, sugar, hoisin sauce, chili paste, minced garlic, and grated ginger. Give it a good whisk and set aside.
  4. Cook the chicken: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the marinated chicken, tossing occasionally until fully cooked and browned, about 5-7 minutes.
  5. Combine everything: Add the cooked noodles to the skillet with the chicken. Pour in the prepared Kung Pao sauce, stirring together to ensure the noodles are coated. Toss in the roasted peanuts.
  6. Garnish and serve: Sprinkle green onions and sesame seeds on top. Serve hot.

Notes

Adjust the spice to your liking. This dish works well with shrimp or tofu as alternatives to chicken.
