- 2 lbs chuck roast, cut into chunks
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 medium onion, quartered
- 4 garlic cloves, peeled
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1 bay leaf
- 6 cups beef broth
- Salt and pepper to taste
- Corn tortillas
- Chopped cilantro and onions, for garnish
- Lime wedges
Instructions
- Prep the chiles: Start by removing the stems and seeds from the guajillo and ancho chiles. Place them in a saucepan and cover with water. Bring to a boil and let them simmer for about 10 minutes to soften.
- Make the sauce: Once softened, transfer the chiles to a blender along with chopped onion, garlic, cumin, oregano, thyme, and about 1 cup of the beef broth. Blend until smooth.
- Brown the meat: In a large pot or Dutch oven, heat some oil over medium-high heat. Season the chuck roast pieces with salt and pepper, then brown them on all sides.
- Combine everything: Pour the blended sauce over the browned meat and add the remaining beef broth plus the bay leaf. Bring to a boil, then reduce the heat to low and cover. Let it simmer for about 120-180 minutes, until the meat is tender.
- Make the tacos: Once the beef is ready, shred it with two forks. Warm the corn tortillas in a dry skillet, then fill them with the beef mixture. Top with chopped onions and cilantro.
- Serve with broth: Serve your tacos with a small bowl of the leftover braising liquid for dipping.
