Description

Delightfully sweet pineapple fritters that bring a slice of paradise to your kitchen. Perfect for any occasion!

Ingredients

Scale
  • 1 ripe pineapple, peeled and cut into bite-sized chunks
  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 cup milk
  • 1 egg, beaten
  • A pinch of salt
  • Vegetable oil for frying

Instructions

  1. Prep that pineapple: Start by cutting your pineapple into small chunks.
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, shredded coconut, sugar, baking powder, and salt.
  3. Add the wet ingredients: Make a well in the center of your dry ingredients, and pour in the milk and the beaten egg.
  4. Time for the pineapple: Gently fold in those pineapple chunks.
  5. Heat the oil: In a deep skillet or pan, heat about an inch of vegetable oil over medium heat.
  6. Fry away: Scoop tablespoon-sized portions of the batter into the oil and fry until golden brown, about 2-3 minutes per side.
  7. Drain and cool: Transfer your fritters to a paper towel-lined plate to drain.
  8. Serve and enjoy: These fritters are best enjoyed warm, with whipped cream or honey if you like.

Notes

Don’t overcrowd the pan when frying. These fritters can be substituted with other fruits for a twist.
