Instructions
- Prep that pineapple: Start by cutting your pineapple into small chunks.
- Mix the dry ingredients: In a large bowl, whisk together the flour, shredded coconut, sugar, baking powder, and salt.
- Add the wet ingredients: Make a well in the center of your dry ingredients, and pour in the milk and the beaten egg.
- Time for the pineapple: Gently fold in those pineapple chunks.
- Heat the oil: In a deep skillet or pan, heat about an inch of vegetable oil over medium heat.
- Fry away: Scoop tablespoon-sized portions of the batter into the oil and fry until golden brown, about 2-3 minutes per side.
