A warm, cheesy, and comforting casserole capturing the delicious flavors of a classic Reuben sandwich without the fuss.

- 8 slices of rye bread, cubed
- 1 pound corned beef, sliced
- 1 cup sauerkraut, drained and rinsed
- 1 cup Swiss cheese, shredded
- 1/2 cup Thousand Island dressing
- 4 eggs
- 2 cups milk
- Salt and pepper to taste
- 1 tablespoon butter (optional, for greasing the baking dish)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9×13-inch baking dish by buttering it.
- Layer half of the cubed rye bread, corned beef, sauerkraut, and Swiss cheese in the dish. Drizzle half of the Thousand Island dressing. Repeat the layering with remaining ingredients.
- Mix eggs and milk in a bowl, seasoning with salt and pepper. Pour the mixture over the layers in the dish.
- Bake covered with foil for about 30 minutes, then remove foil and bake for another 15-20 minutes until bubbly and golden.
- Serve warm after cooling for 5-10 minutes, with extra Thousand Island dressing on the side.
Notes
Try using different breads like pumpernickel or sourdough for a twist. Line the baking dish with parchment paper for easy cleanup.
