Description

A warm, cheesy, and comforting casserole capturing the delicious flavors of a classic Reuben sandwich without the fuss.


Ingredients

  • 8 slices of rye bread, cubed
  • 1 pound corned beef, sliced
  • 1 cup sauerkraut, drained and rinsed
  • 1 cup Swiss cheese, shredded
  • 1/2 cup Thousand Island dressing
  • 4 eggs
  • 2 cups milk
  • Salt and pepper to taste
  • 1 tablespoon butter (optional, for greasing the baking dish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by buttering it.
  3. Layer half of the cubed rye bread, corned beef, sauerkraut, and Swiss cheese in the dish. Drizzle half of the Thousand Island dressing. Repeat the layering with remaining ingredients.
  4. Mix eggs and milk in a bowl, seasoning with salt and pepper. Pour the mixture over the layers in the dish.
  5. Bake covered with foil for about 30 minutes, then remove foil and bake for another 15-20 minutes until bubbly and golden.
  6. Serve warm after cooling for 5-10 minutes, with extra Thousand Island dressing on the side.

Notes

Try using different breads like pumpernickel or sourdough for a twist. Line the baking dish with parchment paper for easy cleanup.
