For the Cake
  • 2.5 cups all-purpose flour
  • 1.75 cups granulated sugar
  • 2/3 cup unsweetened cocoa powder the star of the show!
  • 2.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
For the Frosting
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup heavy cream
  • 2 teaspoons pure vanilla extract

Method
 

Prepping the Cake
  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pans (you can use six 9-inch pans for easier layering).
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
Mixing It Up
  1. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients while mixing on medium speed until smooth.
  2. Carefully stir in the boiling water. This step is crucial as it creates a batter that is thinner but will yield a super moist cake.
Baking the Layers
  1. Pour an even amount of batter into each prepared pan. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
