Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mixing
  1. In a large bowl, combine the creamy peanut butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
  2. Add in the egg, followed by the almond flour, baking soda, and salt. Stir until everything is well combined.
Shaping and Baking
  1. Use a tablespoon or cookie scoop to portion out the dough onto the prepared baking sheet, spacing them apart.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are slightly golden brown.
Cooling
  1. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
