Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Should be nicely softened, not melted.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Mix-Ins
  • 1 cup sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup whole almonds Can be substituted if allergy exists.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar until fluffy.
  4. Mix in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
  6. Gently fold in the shredded coconut, chocolate chips, and whole almonds.
Baking
  1. Drop spoonfuls of cookie dough onto a lined baking sheet, spacing them a couple of inches apart.
  2. Bake for about 12-15 minutes, or until the edges are golden brown.
  3. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

For best results, chill the dough for 30 minutes before baking to prevent spreading. Store leftovers in an airtight container for up to a week or freeze for up to three months.
