Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar until fluffy.
- Mix in the egg and vanilla extract.
- Gradually add the dry ingredients to the butter mixture, stirring until just combined.
- Gently fold in the shredded coconut, chocolate chips, and whole almonds.
Baking
- Drop spoonfuls of cookie dough onto a lined baking sheet, spacing them a couple of inches apart.
- Bake for about 12-15 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
For best results, chill the dough for 30 minutes before baking to prevent spreading. Store leftovers in an airtight container for up to a week or freeze for up to three months.
