Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the almond flour, all-purpose flour, powdered sugar, granulated sugar, baking powder, and salt.
- Add in the softened butter and almond extract. Mix until everything is combined and forms a soft dough.
- Chill the dough in the refrigerator for about 30 minutes.
Baking
- Roll out your dough on a lightly floured surface to about 1/4 inch thick. Use star-shaped cookie cutters to cut out shapes.
- Place the cut-out cookies onto a baking sheet lined with parchment paper. Optionally, sprinkle with sliced almonds or sprinkles.
- Bake for 10-12 minutes or until the edges are just golden.
- Let the cookies cool on a wire rack before enjoying.
