  • 2 cups mixed veggies (Zucchini, bell peppers, carrots, and red onions) Feel free to swap in any veggies you have on hand.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
Bowl Assembly
  • 1 cup cooked quinoa Prepare according to package instructions.
  • 1 avocado, sliced
  • Fresh parsley for garnish
  • Optional toppings: Feta cheese, chickpeas, or a drizzle of balsamic glaze Customize your bowl with toppings based on your preference.

Preparation
  1. Preheat Your Oven: Set your oven to 425°F (220°C) and let it warm up while you prepare your ingredients.
  2. Chop Those Veggies: Slice your mixed veggies into bite-sized pieces.
  3. Season and Oil: Toss the chopped veggies in a large bowl with olive oil, salt, pepper, garlic powder, and paprika.
Roasting
  1. Spread the seasoned veggies on a baking sheet in a single layer.
  2. Roast for about 20-25 minutes, flipping halfway through, until golden and crispy.
Cooking Quinoa
  1. While the veggies are roasting, prepare your quinoa according to package instructions.
Assembly
  1. Once the veggies are perfectly roasted, assemble the bowl starting with a base of quinoa, topped with rainbow veggies and avocado slices.
  2. Garnish with fresh parsley and optional toppings.
