Preparation
- Preheat your oven to 375°F (190°C).

- In a large bowl, beat the softened butter and sugar together until light and fluffy.
- Mix in the egg, vanilla extract, and almond extract until well combined.
Baking
- Gradually mix the dry ingredients into the butter mixture until combined.
- Roll the dough into 1-inch balls and roll them in sugar if desired.
- Place the cookie balls on ungreased baking sheets, about 2 inches apart.
- Bake for about 8-10 minutes or until just barely golden around the edges.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Soft butter is key; microwave for about 10 seconds if necessary. The dough can be refrigerated for up to three days. Add chocolate chips or nuts for variety.
