  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  4. Mix in the egg, vanilla extract, and almond extract until well combined.
Baking
  1. Gradually mix the dry ingredients into the butter mixture until combined.
  2. Roll the dough into 1-inch balls and roll them in sugar if desired.
  3. Place the cookie balls on ungreased baking sheets, about 2 inches apart.
  4. Bake for about 8-10 minutes or until just barely golden around the edges.
  5. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Soft butter is key; microwave for about 10 seconds if necessary. The dough can be refrigerated for up to three days. Add chocolate chips or nuts for variety.
