Muffin Base Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1 cup buttermilk (or milk with a splash of vinegar)
  • ½ cup unsalted butter, melted
  • 2 cups diced apples (Granny Smith or Honeycrisp) These apples work beautifully for the recipe.
Streusel Topping
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup unsalted butter, cold and cubed

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon, and whisk to mix everything together.
  3. In another bowl, whisk together the eggs, buttermilk, and melted butter until well combined, then pour into the dry ingredients and stir until just combined.
  4. Gently fold in the diced apples.
  5. In a small bowl, mix together the flour, brown sugar, and cinnamon for the streusel topping, add the cold cubed butter, and mix until it resembles coarse crumbs.
Baking
  1. Evenly distribute the muffin batter into your prepared muffin tin, filling each cup about 2/3 full.
  2. Sprinkle the streusel topping generously over each muffin.
  3. Bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the muffins cool in the pan for about 5 minutes, then remove them and place them on a wire rack to cool completely.

Notes

Opt for firm and tart apples like Granny Smith or Honeycrisp for the best flavor. For added crunch, consider stirring in some chopped walnuts or pecans.
