Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon, and whisk to mix everything together.
- In another bowl, whisk together the eggs, buttermilk, and melted butter until well combined, then pour into the dry ingredients and stir until just combined.

- In a small bowl, mix together the flour, brown sugar, and cinnamon for the streusel topping, add the cold cubed butter, and mix until it resembles coarse crumbs.
Baking
- Evenly distribute the muffin batter into your prepared muffin tin, filling each cup about 2/3 full.
- Sprinkle the streusel topping generously over each muffin.
- Bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for about 5 minutes, then remove them and place them on a wire rack to cool completely.
