  • 1 cup brown sugar, packed
  • 2 large eggs

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the softened butter and brown sugar until it’s light and fluffy—this takes about 2-3 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture. Gently fold in the chopped apples and pecans.
  6. Pour the batter into your prepared cake pan, spreading it evenly. Bake for about 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack. If desired, dust the top with powdered sugar before serving.

Notes
