Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  4. Mix in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in the diced apples and the chopped nuts, if using.
  7. Grease a loaf pan and pour the batter in, smoothing the top.
Baking
  1. Place the loaf in the preheated oven and bake for 50-60 minutes.
  2. Check for doneness with a toothpick; it should come out clean.
  3. Allow the bread to cool for a few minutes in the pan before transferring it to a wire rack.

Notes

Serve warm with a pat of butter or a drizzle of honey. You can also mix in cranberries or pears for variations.
