Preparation
- Preheat your oven to 350°F (175°C).
- In a medium-sized bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat the softened butter and sugar together until light and fluffy.
- Mix in the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the diced apples and the chopped nuts, if using.
- Grease a loaf pan and pour the batter in, smoothing the top.
Baking
- Place the loaf in the preheated oven and bake for 50-60 minutes.
- Check for doneness with a toothpick; it should come out clean.
- Allow the bread to cool for a few minutes in the pan before transferring it to a wire rack.
Notes
Serve warm with a pat of butter or a drizzle of honey. You can also mix in cranberries or pears for variations.
