  • 1 medium apple, thinly sliced Granny Smith or Honeycrisp recommended.
  • ½ cup feta cheese, crumbled Add more or less to your taste.
  • ¼ cup pistachios, chopped Or leave whole.
Dressing Ingredients
  • ¼ cup olive oil Extra virgin recommended.
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 juice of 1 lemon Add more if desired.
  • to taste Salt and pepper Adjust for personal preference.

Method
 

Preparation
  1. Rinse the fresh spinach leaves under cool water, pat dry, and place in a large salad bowl.
  2. Thinly slice the apple and toss the slices with a sprinkle of lemon juice to prevent browning.
Assembly
  1. Add the sliced apples, crumbled feta, and chopped pistachios to the bowl of spinach.
  2. In a small bowl, whisk together olive oil, honey, Dijon mustard, lemon juice, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently.
Serving
  1. Serve immediately for the freshest taste or refrigerate for 30 minutes to let flavors mingle.

Notes

For added protein, consider adding grilled chicken or shrimp. If you're not a fan of pistachios, feel free to substitute them with walnuts or almonds. Should the dressing be too thick, a splash more lemon juice or warm water can loosen it up.
