Wet Ingredients
  • 1 cup plain yogurt Greek yogurt adds a nice touch.
  • 1 cup sugar For sweetness.
  • 1/2 cup vegetable oil Or melted butter for richness.
  • 2 large eggs
  • 1 tsp vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon Feel free to add more if you love that spice!
Fruits
  • 2 cups peeled and chopped apples Granny Smith or Honeycrisp recommended.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the yogurt, sugar, oil, eggs, and vanilla extract until well combined and smooth.
  3. In another bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. Whisk them together.
  4. Gently fold the dry ingredients into the wet mixture until just combined; a few lumps are fine.
  5. Fold in the chopped apples.
Baking
  1. Pour the batter into your prepared pan and bake for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack and let it cool completely before slicing.

Notes

For added texture and flavor, consider tossing in some walnuts or raisins. If you're short on apples, substitute half with pears. Don’t fret if the top gets a little golden; that’s just a sign of deliciousness!
