Ingredients
  

Main Ingredients
  • 4 cups baby arugula
  • 1 grapefruit, segmented
  • 2 oranges, segmented
  • 1 small red onion, thinly sliced
  • 4 oz goat cheese, crumbled
  • 1/4 cup walnuts, roughly chopped
Dressing
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. Wash the baby arugula in cold water. Shake off excess water and place it in a large serving bowl.
  2. Peel and segment the grapefruit and oranges, removing any excess pith. Add the segments to the bowl with the arugula.
  3. Sprinkle in the thinly sliced red onion.
  4. Crumble the goat cheese over the top of the salad.
  5. Add the roughly chopped walnuts.
  6. In a small bowl, whisk together the olive oil and white wine vinegar. Add salt and pepper to taste, then drizzle it over your salad and toss gently.
  7. Serve immediately and enjoy your refreshing salad!

Notes

For best results, keep the dressing separate until serving if making ahead. Feel free to substitute the goat cheese with feta or blue cheese, and walnuts with almonds or pecans. A drizzle of honey can add a lovely sweetness.
