  • 2 slices slices of your favorite bread (sourdough or whole grain)
  • 1 whole ripe avocado Make sure it’s ripe!
  • 1 cup cherry tomatoes, halved Colorful and juicy!
  • 4 ounces fresh mozzarella, sliced Fresh mozzarella has the best flavor.
  • 1 handful fresh basil leaves Add more for extra flavor!
  • Salt and pepper to taste
  • Olive oil A drizzle for flavor.
  • Balsamic glaze Optional but recommended.

Method
 

Preparation
  1. Toast the bread until golden and slightly crispy.
  2. In a small bowl, scoop out and mash the avocado to your desired smoothness.
  3. Season the mashed avocado with a pinch of salt and pepper, and optionally a squeeze of lemon juice.
  4. Spread the mashed avocado generously on each slice of toasted bread.
  5. Layer mozzarella slices and halved cherry tomatoes on top of the avocado.
  6. Garnish with fresh basil leaves and drizzle with olive oil and balsamic glaze if using.
  7. Serve immediately and enjoy the fresh flavors.

Notes

Ripeness is key for the avocado! Feel free to customize toppings with extras like red pepper flakes or garlic. Store toast ingredients separately to keep things fresh.
