  • 2 pieces ripe avocados Make sure they are perfectly ripe.
  • 4 slices of your favorite bread (sourdough, whole grain, or gluten-free) Choose your preferred type of bread.
  • 4 oz feta cheese, crumbled Feel free to substitute with goat cheese or vegan cream cheese.
  • 1 tbsp extra virgin olive oil
  • 1 piece lemon (juiced)
  • a pinch salt and pepper
  • Optional: red pepper flakes, fresh herbs (like dill or parsley), or cherry tomatoes for garnish

Method
 

Preparation
  1. Toast the bread slices until they are golden brown and crispy.
  2. In a bowl, scoop out the ripe avocados, add lemon juice, salt, and pepper, and mash them together until creamy but still a bit chunky.
  3. Spread a generous amount of the avocado mixture over each slice of toast.
  4. Crumble the feta cheese over the avocado mixture.
  5. Drizzle extra virgin olive oil over the topped toasts.
  6. Garnish with red pepper flakes, fresh herbs, and cherry tomatoes if desired.

Notes

Make sure your avocados are ripe for optimal flavor. Experiment with toppings such as smoked salmon or poached eggs for added variety. For a sweet twist, add sliced strawberries or figs on top.
