Preparation
- Spread one tablespoon of butter on one side of each slice of bread.
- On the unbuttered side of one slice, layer your fresh mozzarella slices, then the tomato slices, and finally, the avocado.
- Sprinkle a pinch of salt and pepper over the avocado and top it off with the second slice of bread (buttered side out).
Cooking
- Place your sandwich on a skillet over medium heat and cook for about 3-4 minutes on one side, pressing gently with a spatula.
- Carefully flip your sandwich and repeat the process on the other side until both sides are golden and cheese has melted.
- Remove from skillet and let it rest for a minute.
Serving
- Cut your sandwich in half and serve warm.
Notes
Add a sprinkle of red pepper flakes or herbs for extra flavor. Pair with a salad or tomato soup for a complete meal. This recipe can also be made in a panini press.
