Ingredients
  

Bread and Spreads
  • 2 slices slices of your favorite bread (sourdough, whole grain, or gluten-free)
  • 2 tablespoons butter (or olive oil for a lighter option)
Filling
  • 1 ripe avocado, sliced
  • 1 medium tomato, sliced
  • 4 slices fresh mozzarella cheese
Seasoning
  • Salt and pepper, to taste

Method
 

Preparation
  1. Spread one tablespoon of butter on one side of each slice of bread.
  2. On the unbuttered side of one slice, layer your fresh mozzarella slices, then the tomato slices, and finally, the avocado.
  3. Sprinkle a pinch of salt and pepper over the avocado and top it off with the second slice of bread (buttered side out).
Cooking
  1. Place your sandwich on a skillet over medium heat and cook for about 3-4 minutes on one side, pressing gently with a spatula.
  2. Carefully flip your sandwich and repeat the process on the other side until both sides are golden and cheese has melted.
  3. Remove from skillet and let it rest for a minute.
Serving
  1. Cut your sandwich in half and serve warm.

Notes

Add a sprinkle of red pepper flakes or herbs for extra flavor. Pair with a salad or tomato soup for a complete meal. This recipe can also be made in a panini press.
