Ingredients
  

For the Toast
  • 2 slices whole grain bread or any preferred bread
For the Topping
  • 1 ripe avocado the star of the show
  • 1/4 cup crumbled feta cheese for that salty kick
  • 1 cup cherry tomatoes, halved adds color and juiciness
  • 1 tablespoon olive oil for drizzling
  • to taste salt and pepper basic seasoning
  • 1 squeeze lemon juice for freshness

Method
 

Preparation
  1. Toast the two slices of bread until golden and crispy.
  2. Scoop the avocado flesh into a bowl, season with salt, pepper, and lemon juice, then mash until creamy.
  3. In a separate bowl, combine the halved cherry tomatoes with olive oil and a sprinkle of salt, tossing gently.
Assembly
  1. Spread the mashed avocado on each slice of toasted bread.
  2. Top with crumbled feta and the halved cherry tomatoes.
  3. Add additional salt and pepper to taste.

Notes

Avocado ripeness can be sped up by placing it in a brown paper bag with an apple or banana overnight. Customize with red pepper flakes or herbs. Store leftovers separately to keep them fresh.
