Assembly
- Spread the mashed avocado on each slice of toasted bread.
- Top with crumbled feta and the halved cherry tomatoes.
- Add additional salt and pepper to taste.
Notes
Avocado ripeness can be sped up by placing it in a brown paper bag with an apple or banana overnight. Customize with red pepper flakes or herbs. Store leftovers separately to keep them fresh.
