Ingredients
  

Main Ingredients
  • 1 each ripe avocado
  • 1/2 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 2 slices your favorite bread (sourdough, whole grain, or gluten-free)
  • 1 tablespoon olive oil
  • to taste salt and pepper
Optional Toppings
  • to taste fresh basil
  • to taste red pepper flakes
  • to taste squeeze of lemon juice

Method
 

Preparation
  1. Slice the cherry tomatoes in half. Crumble the feta cheese and set it aside.
Toasting
  1. Pop your slices of bread in the toaster or on a grill pan.
Avocado Preparation
  1. In a bowl, scoop out the ripe avocado and mash it. Add salt and pepper for flavor and whisk in lemon juice if desired.
Assembly
  1. Once the bread is toasted, spread the mashed avocado on top. Add crumbled feta and halved cherry tomatoes.
Finishing Touches
  1. Drizzle olive oil over the top and sprinkle on salt and pepper. Optionally, add fresh basil or red pepper flakes.
Serving
  1. Enjoy the toast with a fork or your hands!
