- Mash the ripe avocado in a bowl, adding salt, pepper, and lemon juice.
Cooking
- Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then slide gently into the water.
- Poach the eggs for about 3-4 minutes until the whites are set but yolks are still a little runny.
Assembly
- Spread the mashed avocado on the toasted bread, place a poached egg on top, and finish with a sprinkle of red pepper flakes.

Notes
Don’t skip the lemon to keep the avocado fresh. Eggs can also be scrambled or fried as per your preference.
