  • 1 whole ripe avocado
  • 2 slices whole-grain bread toasted
  • 2 large eggs poached or cooked to preference
  • to taste salt
  • to taste black pepper
  • a sprinkle red pepper flakes optional, for added spice
  • to taste fresh lemon juice optional, for flavor enhancement

Method
 

Preparation
  1. Toast the slices of whole-grain bread until golden and crisp.
  2. Mash the ripe avocado in a bowl, adding salt, pepper, and lemon juice.
Cooking
  1. Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then slide gently into the water.
  2. Poach the eggs for about 3-4 minutes until the whites are set but yolks are still a little runny.
Assembly
  1. Spread the mashed avocado on the toasted bread, place a poached egg on top, and finish with a sprinkle of red pepper flakes.
Serving
  1. Sit down and enjoy your delicious avocado toast!

Notes

Don’t skip the lemon to keep the avocado fresh. Eggs can also be scrambled or fried as per your preference.
