  • 4 slices slices of bacon
  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup broccoli florets (or any veggie of your choice)
  • 1 bell pepper (chopped)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • 1 tsp paprika (optional for a bit of spice)
  • Chopped fresh parsley for garnish Because we eat with our eyes too!

Method
 

Cooking Steps
  1. In a large skillet (preferably non-stick), add the bacon over medium heat. Let it cook until it's crispy, about 5-7 minutes. Once cooked, remove the bacon and let it drain on a paper towel.
  2. Keeping a tablespoon of the bacon grease in the pan, throw in your chicken pieces. Season with salt, pepper, and paprika (if using). Cook for about 5-7 minutes until the chicken is golden brown and fully cooked through.
  3. Stir in the garlic, broccoli, and bell pepper. Cook for another 3-4 minutes until the veggies are tender-crisp.
  4. Crumble the crispy bacon back into the skillet, mixing everything together. Give a final taste and adjust the seasoning if needed.
  5. Remove from heat, garnish with fresh parsley, and serve immediately. You can serve it over rice or quinoa or just enjoy it as is.

Notes

Consider doubling the recipe for meal prep. This dish holds up well in the fridge for a couple of days. Feel free to play with the vegetables!
