Preparation
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, cook the chopped bacon until crispy. Set it aside on a paper towel-lined plate.
- Remove some bacon grease, leaving a bit for flavor. Sauté the diced onions in the skillet for about 3 minutes until translucent, then add the ground beef. Season with salt and pepper and cook until the beef is browned.
- Stir in the ketchup, mustard, and half of the crispy bacon. Optionally, add the diced pickles.
Layering
- In a baking dish, spread half the tater tots across the bottom.
- Layer the beef mixture over the tots, sprinkle half the cheese on top, and then layer the remaining tater tots.
- Finish it off with the rest of the bacon and a final sprinkle of cheese.
Baking
- Bake for 25-30 minutes until the tater tots are golden brown and the cheese is melted.
- Let it cool for a few minutes before serving, topped with green onions.
Notes
Make ahead by assembling the casserole in advance and refrigerating it. Adjust cooking time if baking chilled. Also, feel free to customize your toppings with jalapeños or diced tomatoes.
