Preparation
- Crush the chocolate sandwich cookies into fine crumbs using a zip-top bag and rolling pin or a food processor.
- Add the melted butter to the cookie crumbs, mix well, and set aside.
Craft the Cheesecake Layer
- In a large mixing bowl, combine the cream cheese and powdered sugar, beating with an electric mixer until smooth.
- Gradually add the Baileys and cocoa powder, continuing to mix until everything is well blended.
Whip the Cream
- In another bowl, beat the heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the cheesecake mixture.
Layer It Up
- In individual cups or a large trifle dish, start with a layer of the cookie crumbs, followed by a layer of the chocolate cheesecake mixture.
- Repeat the layers until the dish is full, finishing with a dollop of whipped cream on top.
- Sprinkle chocolate shavings or cocoa powder for added flair.
Chill
- Refrigerate the trifle for at least 4 hours or overnight to allow the layers to meld together.
Notes
For a substitution, coffee liqueur or non-alcoholic Irish cream syrup can replace Baileys. Feel free to add fresh berries between layers for a fruity twist.
