Ingredients
  

For the Chocolate Cheesecake Layer
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup Baileys Irish Cream
  • 1 cup heavy whipping cream
  • 1/2 cup cocoa powder
For the Cookie Layer
  • 1 ½ cups chocolate sandwich cookies (Oreo, anyone?)
  • 2 tablespoons melted butter to bind those cookie crumbs together
For Garnish
  • Chocolate shavings or cocoa powder
  • Additional whipped cream optional

Method
 

Preparation
  1. Crush the chocolate sandwich cookies into fine crumbs using a zip-top bag and rolling pin or a food processor.
  2. Add the melted butter to the cookie crumbs, mix well, and set aside.
Craft the Cheesecake Layer
  1. In a large mixing bowl, combine the cream cheese and powdered sugar, beating with an electric mixer until smooth.
  2. Gradually add the Baileys and cocoa powder, continuing to mix until everything is well blended.
Whip the Cream
  1. In another bowl, beat the heavy whipping cream until stiff peaks form.
  2. Gently fold the whipped cream into the cheesecake mixture.
Layer It Up
  1. In individual cups or a large trifle dish, start with a layer of the cookie crumbs, followed by a layer of the chocolate cheesecake mixture.
  2. Repeat the layers until the dish is full, finishing with a dollop of whipped cream on top.
  3. Sprinkle chocolate shavings or cocoa powder for added flair.
Chill
  1. Refrigerate the trifle for at least 4 hours or overnight to allow the layers to meld together.

Notes

For a substitution, coffee liqueur or non-alcoholic Irish cream syrup can replace Baileys. Feel free to add fresh berries between layers for a fruity twist.
