Preparation
- In a large bowl, whisk together the chocolate pudding mix, cold milk, and Baileys Irish Cream for about 2 minutes until smooth and thick.
- Stir in the peppermint extract.
Assembly
- Start with a layer of pudding at the bottom of the serving glasses.
- Add a generous dollop of whipped cream on top.
- Continue layering pudding and whipped cream until reaching the top of the glass.
- Finish with a sprinkle of chocolate shavings or crushed mint candies.
Chill and Serve
- Let the parfaits chill in the fridge for about an hour before serving.
Notes
For best results, prepare the pudding a day in advance and assemble right before serving.
