Ingredients
  

For the Cake
  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk Can be substituted with regular milk plus vinegar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot water
  • 1/2 cup Baileys Irish Cream
For the Frosting
  • 1/2 cup unsalted butter, softened
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup Baileys Irish Cream
  • 1/4 cup milk
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, combine the buttermilk, oil, eggs, and vanilla extract. Mix well until everything is nicely blended.
  4. Pour the wet ingredients into the dry ingredients, and mix until you don’t see any dry flour. Then, slowly add the hot water and Baileys.
Baking
  1. Grease a sheet cake pan and pour your smooth batter in. Bake for about 30-35 minutes, or until a toothpick comes out clean when poked in the center.
Frosting
  1. While the cake is baking, mix together the softened butter and cocoa powder until smooth. Add the powdered sugar, Baileys, and milk gradually until you find the perfect frosting consistency. Add vanilla extract.
  2. Let the cake cool completely before frosting it. Slather the frosting on top.
Serving
  1. Cut yourself a generous piece and serve.

Notes

For a quick buttermilk substitute, add a tablespoon of vinegar or lemon juice to regular milk and let sit for 5 minutes. If frosting is too thick, add a splash of milk.
