  • 1 round Brie cheese (about 8 ounces)
  • 1 round crusty round bread (like sourdough or ciabatta)
  • 1 cup cranberry sauce (store-bought or homemade)
  • 1 teaspoon fresh thyme leaves (plus a sprig for garnish)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cut the top off the round bread and hollow out the center, leaving about an inch of the crust. Save the pieces of bread you scoop out for later.
  3. Place the Brie cheese in the hollowed bread bowl and add some fresh thyme leaves on top.
  4. Add a generous layer of cranberry sauce on top of the Brie.
  5. Drizzle olive oil over the top, and sprinkle with salt and pepper.
  6. Place the bread bowl on a baking sheet and bake for 20-25 minutes, or until the cheese is bubbly and the bread is golden brown.
  7. Remove from the oven and let it sit for a few minutes. Garnish with a thyme sprig, then serve with reserved bread pieces, crackers, or veggies.

Notes

If the Brie oozes a little, that’s just how it should be! Feel free to swap the cranberry sauce for fig jam or apple chutney. Assemble everything in advance and pop it in the oven before guests arrive for easy entertaining.
