Ingredients
  

Puff Pastry & Cheese
  • 1 sheet store-bought puff pastry, thawed (about 8×8 or 9×9 inches) Use high-quality puff pastry.
  • 1 wheel brie (8–9 oz) Use good-quality brie.
  • 1 egg beaten (for egg wash) or milk for brushing
Prosciutto & Figs
  • 3–4 slices prosciutto Can swap for bacon.
  • 3–4 figs fresh, halved (or 3 tbsp fig jam if figs aren’t in season) Fig jam or apricot preserves can be substitutes.
Flavorings
  • 2 tbsp honey (plus extra for drizzling)
  • 1 tsp fresh thyme leaves (optional)
  • Cracked black pepper, to taste
  • a handful toasted chopped walnuts or pecans (optional) For added crunch.

Method
 

Preheat and Prep
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. If your puff pastry came folded, gently roll it out to smooth the seams.
Prep the Brie
  1. Pat the brie dry. If you like milder cheese, trim a thin layer off the rind.
  2. Drizzle 1 tbsp honey over the brie and scatter fig halves or fig jam on top. Add thyme and black pepper.
  3. If using, add toasted nuts.
Layer the Prosciutto
  1. Drape prosciutto slices around the brie, tucking the edges under the cheese.
Wrap in Puff Pastry
  1. Place the brie in the center of the rolled puff pastry. Bring pastry up and over the cheese, pinching seams together.
  2. Trim any excess pastry and flip the wrapped wheel seam-side down onto the baking sheet.
  3. Use pastry scraps for decoration if desired. Brush with beaten egg or milk.
Bake
  1. Bake at 400°F for 20–25 minutes, until golden brown and puffy.
  2. Keep an eye—ovens vary, and tent with foil if browning too quickly.
Rest and Serve
  1. Let the baked brie rest for 5–10 minutes before serving.
  2. Drizzle with extra honey before serving with sliced baguette, crackers, and fresh fruit.

Notes

For best results, ensure the brie is dry to avoid soggy pastry. Can assemble ahead and refrigerate.
