Preparation
- Preheat your oven to 375°F (190°C).
- Roll out the puff pastry on a lightly floured surface.
- Place the brie in the center of the puff pastry.
- Spread fig jam generously on top of the brie.
- Tuck in the fresh rosemary sprigs on top of the jam.
- Fold the pastry over the brie, pinching the seams to enclose it.
- Brush the pastry with the egg wash for a golden finish.
Baking
- Place the wrapped brie on a baking sheet and bake for 25-30 minutes or until golden brown and puffed up.
Serving
- Let it cool slightly before serving with crackers, apples, or baguette.
Notes
You can prepare the dish a few hours in advance and refrigerate it until ready to bake. Reheat in the oven if needed. If the puff pastry tears, just patch it up for a rustic look.
