Preparation
- Preheat the oven to 400°F (200°C).
- On a lightly floured surface, roll out the puff pastry until it’s about 1/4 inch thick.
- Place the Brie in the center of the pastry. Spoon the cranberry-pepper jelly on top of the Brie.
- Fold the pastry up and over the Brie, completely encasing it. Pinch the edges to seal.
- Brush the outside of the pastry with the beaten egg.
Baking
- Place the wrapped Brie on a baking sheet lined with parchment paper and bake for 25–30 minutes until golden and flaky.
- Let it cool for a few minutes before garnishing with fresh herbs and serving with crackers, fresh fruits, or slices of bread.
Notes
Chill the cheese for about 30 minutes before wrapping to prevent oozing. You can substitute the jelly with other flavors like fig or apricot. Pairs well with crisp white wine or a seasonal cocktail.
